Whole Wheat Chocolate Chip Pancakes

I know what you’re thinking. Why chocolate chips and not fruit? That would be way healthier. But you don’t have the daughter I have who is completely obsessed with chocolate chips. She wants to eat them for breakfast, lunch and dinner. Which of course I do NOT let her do! Jeez.

But this morning – Sunday morning – I thought, what the hell? Let’s throw a few into the batter! And they were really delicious.


Whole Wheat Chocolate Chip Pancakes

1 1/4 cup whole wheat flour

2 teaspoons baking powder

1/2 teaspoon salt

1 egg

1 cup milk (you can substitute with almond milk)

1 tablespoon brown sugar

3/4 cup chocolate chips

Mix the flour and baking soda together in one bowl. Mix the egg, salt, milk and sugar together in another bowl. Add the wet to the dry and mix well, then add the chocolate chips. Fry in butter (yay!) using 1/3 cup dollops of batter per pancake. It makes about 12 this way.

A note about baking powder: If you bake a lot you probably already know this, but baking powder stops working when it expires and can really make your baking taste like crap. Take it from me, a formerly crappy baker. I used to have the same baking powder for centuries, but when I read about this I bought new stuff and it definitely makes a difference.

You don’t really need to serve syrup with these pancakes, but I did anyway, just to put my child in a sugar coma. Don’t judge me.

Oh  my god I almost forgot to mention that the apple sage fake sausages from Field Roast are so amazing with pancakes you could swear you’re about to bite into some gristle. But you never do! Genius. Violet doesn’t like them, but she’s three – what does she know?
