Baby Squash & Garlic Mid-Afternoon Snack

Do you find yourself craving something else after you’ve already eaten your lunch? Maybe it’s just me because I work at home so close to my damn kitchen, but I was just in there wandering around aimlessly looking in the cupboards and the fridge intermittently frowning and rubbing my belly.

On the third time opening the fridge I picked up these little yellow squashes (do you pluralize squash?) that I bought at the Farmer’s Market because they’re so cute. I wasn’t really sure what I was going to do with them and suddenly I realized they probably only had another day or two before they would be sacrificed to the God of Good Intentions.

Before I had time to change my mind, I cut them up, grabbed some olive oil and a couple of cloves of garlic and threw them all together on medium high heat until they browned.

You know what? I feel pretty satisfied. I don’t even want a cookie anymore.
