Lemon Curd in Five Minutes!

I follow Sue Riedl’s Cheese & Toast blog on Instagram @cheese.and.toast as everyone should, and one day she posted a food porn picture of lemon curd that looked mouthwateringly delicious. And here’s the kicker – she made it in the microwave!!! Usually you have to slave away with a double boiler pot, but this recipe takes FIVE MINUTES!

3 eggs

3/4 cup white sugar

1/2 cup fresh-squeezed lemon juice

2 teaspoons lemon rind

1/2 cup melted butter

In a medium microwave-safe bowl, combine the eggs & sugar, whisking until well combined. Add the remaining ingredients and microwave one minute at a time, stirring in between. Mine took 3 minutes to become gelatinous – Sue says you can tell it’s done if it coats the back of a spoon.

With two lemon trees in the back yard, I’m always looking for citrus recipes, and this one is ridiculously tasty. I’ve been scooping it up with left-over Christmas sugar cookies as a make-shift crust. In moderation of course. Don’t judge me.
