Black Bean Banana Brownies

Violet and I both love chocolate, but I’m starting to get concerned about her constant cravings, asking for a bowl of chocolate chips after having just eaten a bowl of chocolate ice cream. Richard and I do our best to stick to one ‘special surprise’ per evening, so it really helps to have that special something be satisfying for more than just a few minutes.

Lately, we’ve found that something – Black Bean Banana Brownies! I found them on Twitter from the Happy Herbivore who has TONS of great recipes. Hers are vegan and delicious, and I whole-heartedly recommend them to everyone. Click on that Happy Herbivore link to get her healthier version.

My recipe below has one major adjustment in the form of one certain non-vegan ingredient…okay it’s chocolate.

Black Bean Banana Brownies

1 15-oz can of black beans, drained

2 bananas

1/4 cup unsweetened cocoa powder

1/4 agave syrup

1 teaspoon vanilla

1 teaspoon cinnamon

1/3 rolled oats

1/4 cup chocolate chips

1/4 cup chopped walnuts or cashews

Put everything into a food processor except the oats, chocolate chips and nuts. Blend like the wind. Pour the batter into a bowl and stir in the oats, chocolate chips and nuts.

Pour into an 8 x 8 baking dish and bake at 350 degrees for 30 minutes.

Let cool before you eat. Don’t cut them immediately and burn your finger on the melted chocolate.
