Polenta & Salsa Rounds

Sometimes I think those polenta tubes in the supermarket are a disgrace. It’s like cheating. How hard is it to boil cornmeal for a few minutes and have fresh polenta?

But then I have a busy month like this one and realize – those pre-formed polenta tubes are genius! And look what you can make in ten minutes flat with some pre-made salsa and a bit of crumbled goat cheese.

Rip up some cilantro or parsley and it even looks fancy! I’d call that a busy mom meal to remember. Seriously, remember it – it will cheer you up one day when you’re about to have cereal for dinner.
