It’s no secret that I love cookie dough. I love it more than the cookies themselves. And guess what? So does Violet! I know, I’m not supposed to let her eat raw cookie dough because of the eggs, but I wash the outside of the eggs in hot water first now, so I think we’re okay. Supposedly the bacteria is on the egg shell, says my mom! (mom, if Violet ends up in the hospital, it’s all on you.)
Anyway, we do bake a few for Daddy to eat later. I’ve noticed that he always compliments me on the cookies when we bake them until crispy. I prefer gooey cookies (for obvious reasons – they’re more doughy!) but I’m usually so sick from eating cookie dough by the time they come out, that I don’t want any. And neither does Violet, not that she appears to have an opinion about crispy vs. gooey. So I make them crispier now every time.
Whole Wheat Oatmeal Chocolate Chip Cookies
1/2 cup butter (1 stick) melted
3/4 brown sugar
1 egg
3/4 cup whole wheat flour
3/4 cup rolled oats
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 cup chocolate chips
Mix the dry ingredients in one bowl, the wet (plus sugar) in another, then mix them together – it’s a very stiff dough. Place 1-teaspoon sized balls on ungreased cookie sheet and bake at 350 degrees for 8-10 minutes, depending on crispiness desired.
